  • 1 can crushed tomatoes
  • 2 bell peppers, diced
  • 1 onion, diced
  • 4 cloves garlic
  • 2 tsp cumin
  • 1 tsp smoked paprika
  • 4 oz feta cheese

Serves four

Quantities above make four portions. Calorie count is per serving.

Method

  1. Sauté onion and peppers in olive oil until softened, about 5 minutes.
  2. Add garlic, cumin, paprika, and a pinch of cayenne. Cook 1 minute until fragrant.
  3. Pour in crushed tomatoes, season, and simmer 8 minutes until thickened.
  4. Make 6 wells and crack an egg into each. Cover and cook 6-8 minutes until whites are set.
  5. Crumble feta over top, garnish with cilantro and serve straight from the skillet with bread.

Timing

Allow roughly 6 minutes of preparation and 16 minutes of cooking. Read the method through once before you start so nothing waits on a pan you could have had going already.
